Writing a Birth Story..

This weekend I'm finally sitting down to write in my 'Motherhood' journal... to write about the beautiful birth of our precious Clara.  I'm excited to get it all written down and sort of 're-live' the day.. what a perfect day it was!  I really love this journal.  I want to make sure to write down everything I can... so that one day, when my baby girl is all grown up... I can give it to her as a gift.. something she can treasure and read whenever she wants.. so she knows what a beautiful gift from God she is.. how loved she is (and was before she was even born).. and so she can read about every detail of the day that a miracle happened.. the day that she was born into this world.. oh how I love her so very, very much!

Keeping Busy

We had a nice, relaxing weekend... on Saturday we took our little munchkin for a walk downtown.  She loves going for walks in her stroller, and we all needed to get some fresh air.  It was pretty warm out, but there was a nice breeze so I didn't feel too bad about having her outside for a little longer.  We walked around, did some people watching (a fun thing to do here in Korea, ha ha), and got some lunch at one of our favorite little places, Star Kebab.. A little Turkish restaurant - so good!  I've also been wanting to try their Turkish ice cream (also called Dondurma).  It was certainly interesting.. not bad, just different.

Always something to laugh at around here..


I've also been keeping myself pretty busy crocheting up some things for Clara while she's napping... like little headbands.  I'm also working on a baby blankie for her.  I put the headband on her again when she woke up.. and she kept ripping it out.. silly girl.  She makes me laugh.  Today I left her with daddy for a couple hours so I could get some 'me' time and get a manicure & pedicure (courtesy of my loving hubby:).  I came home, picked her up, and asked her if she missed me while I was gone and she just gave me the biggest smile!  It just made my day!  Then I proceeded to play with her and started to sing her some songs by the Beatles... only because the movie Across the Universe was on TV, so I just sang along with it.  She just rolled her eyes in the back of her head and fell asleep.  I love how she doesn't care how horrible I am at singing.. or the fact that I was singing her Beatle songs.


I've been feeling pretty crafty lately.  Here's a few things I'd like to make... maybe I'll open an etsy and start selling some things, who knows... I keep saying that.. one of these days I'll actually do it ;)







Happy 4th of July!

I hope everyone had a fabulous 4th of July - I know we did!  My husband grilled out some delicious food... we had ribs, corn, beans, fruit... and we shared the afternoon with some good friends.  And since it was actually nice out for once (and not muggy) we decided to take our little angel on a stroll down to Liberty Fest on base.


She was so good.. slept the whole time.  :)  We only stayed for a little while, though.  I didn't want to have her out for too long, but I needed to get out of the house!  Later that night we were able to see the fireworks from the comfort of our own couch - right through our living room window!  Perfect!

OH - did I mention I also made strawberry pie?  Well, I did.  And it was delicious!  A great 4th of July dessert, if you ask me.  :)  It only took me twice as long as it normally would to make it... it takes me twice as long to do anything these days.. between changing diapers, feedings, and all the breaks I have to take to kiss Clara's cute little cheeks!  ;)


Fresh Strawberry Pie

  • 1 9-inch pie crust, baked
  • 2 pounds fresh strawberries, rinsed and hulled 1/2 cup granulated sugar
  • 2 1/2 teaspoons cornstarch
  • 1 1/2 teaspoons lemon juice, freshly squeezed
  • 1/8 teaspoon salt
  • 1 envelope unflavored powdered gelatin
  • 2 tablespoons cold water

Slice approx. 3 cups of the strawberries into quarters and place them in a medium bowl.  Crush the berries so you have about 1 1/2 cups crushed berries.  Place them in a saucepan over medium heat with the sugar, cornstarch, lemon juice and salt and stir to combine. Bring to a simmer, stirring occasionally for about 5-7 minutes, until the mixture begins to thicken slightly.

Soften the gelatin in the cold water and set it aside.  Remove berry mixture from the heat and add the softened gelatin and stir until the gelatin has dissolved. Set aside to cool.

Cut the remaining berries into quarters, and gently fold them into the cooled cooked mixture -- you can reserve some if you want to 'decorate' the top of the pie. Pour the filling into the baked pie shell, and chill in the refrigerator until set, at least 2 hours or overnight before serving. Makes 1 pie.  Serve with whipped cream if desired.
