And I think I just realized it yesterday.

Coleman and I decided to take a trip out into the city the other day.. a little change of scenery, to see what else we could get into around here. We went to E-mart, which I suppose would be the equivalent to a Wal-Mart in the states. It was fun to look around and I can't wait to go back because they had some really neat things there. While we were there I had to pick up a hair dryer because the one I brought with me about fried our power converter. Not only that, but it sucks having to drag that converter box from room to room whenever I need to plug something in.

After that, we were pretty hungry so we were going to get a bite to eat at the food court in E-mart. We got in there and realized.. well crap, we can't read anything on the menu. And there were no pictures, so it's not like we could just point to something that looked good. That really sucked. And that's when I realized that I'm definitely in a different country. It's weird being the outsider, being the minority. Looks like it's time to teach myself a little bit of Korean, otherwise it's going to be a long 2 years! So we went downtown and ate at Happy Teriyaki.. which seems to be a favorite around here. And now I have a new favorite appetizer/snack.. yaki gyoza. YUM.

This weekend we also went to this neat little restaurant/coffee/pastry place called the Heavenly Bread Company and it's only like a 5 minute walk from our home.. awesome!  Coleman has a strawberry mango smoothie and I had a white chocolate mocha.. and we split this chocolate mousse cake thing.. I'm not really sure what it was, but it was delicious!  I can't wait to go back- they had all kinds of yummy looking pastries and breads, and their coffee was good too!

 
 One thing I wish I would have done before coming here is shopped for more summer clothes.. it is dang HOT here.  Now, I have a lot of clothes (or at least my parents think so.. haha), but not nearly enough tank tops for living here, imo.  Maybe it just feels 10x hotter because I walk everywhere?  Maybe.

Finally made it to Korea!

I'm trying to do laundry right now.  We have an insane amount to do, and I have no idea how to work the wash/dry machine.  The landlord came over to show us how to work it (because it's all in Korean.. all of our appliances are), and I just put in a load of towels... sooo.. we'll see how this turns out.  I don't even know if I put the detergent in the right spot, haha.

All the flights to get here were good.  They were all smooth and trouble free.  I slept for about 7 hours on the flight to Japan, so that helped to speed up the flight.  We stopped at Misawa AB in Japan for about an hour and half, and then headed to Osan AB, which was a 2 hour flight.  I was so impatient when we landed!  Of course they let all the "important" people off the plane first.  I saw Coleman in the follow me truck outside while I was sitting on the plane - oh yeah, did I say I was getting impatient??  I just wanted to get off the plane to go see him, but everything felt like it took forever.. getting off the plane, going through customs and immigration.. bla bla.. but I finally got through it all, got my bags, and walked out to see him standing there waiting for me with some beautiful flowers!  The best feeling in the world.  :)  He was able to get off work early that night, so we went out to dinner at a place called Happy Teriyaki... they had some amazing egg rolls!  Jet lag caught up to me at about 3:30 in the afternoon, so I had to force myself to stay awake in hopes of getting on a somewhat normal sleep schedule right away.  I was able to stay awake until 9pm.. and then woke up at 5:30am.. earliest I've woken up in a LONG time, haha!  But we got a lot accomplished today!

Now Coleman is at work, so I'm working on cleaning the apartment.  Maybe later I'll take a little walk in the city, or on base.. I really need to go to the BX and Commissary.  But I don't know if I'm that brave yet.  We'll see.  :)  First I have to conquer that washer/dryer..  Maybe if I get this apartment cleaned up today I'll be able to do a video tour of the apartment.. I know our families would appreciate that.

I really missed the jet noise.  Although it seems like it's 10x louder here than it was in Virginia.. but that's okay.. sometimes I still run outside to see if I can catch a glimpse of them lol.

Stuck at SeaTac

I have been in Seattle for 6 1/2 hours now, and I still have 4 more hours until my plane boards for Japan.  That is much too long to be in an airport, I must say.  I would really love it if they would just board the plane so I can go to sleep.  I can't sleep in this airport.  It's freezing.  Of course the plane probably won't be any better, but I just wanted to whine about it.

When I checked in at the counter for my flight here in Seattle, they made me stand on the scale so they could see how much I weighed.. LOL.  I've never had to do that before - it was kind of funny to see everybody standing on the scales.  Everything has gone smooth so far, thankfully!  I'm so excited to get to my husband.  I  keep playing it over and over in my head how it's going to be when I see him.  I just hope I sleep for the majority of the plane ride so when I get there in the afternoon I'm not sluggish.  I even bought myself a little neck pillow, so I'm really excited to use that.  Someone let me borrow their neck pillow on the flight from Chicago to Seattle but it was this cheapo inflatable one that you blow up by mouth and it was half deflated.  It SUCKED.  Mine is nice and plush and I paid more for it than I should have but I can't help that the airports like to jack up their prices!  It's worth it with all our traveling.  I'm pretty much an airport pro now.

Ok, I have to go splash some cold water on my face before I pass out on my keyboard.

PS-  Note to self... next time bring a sweater.  It's cold.  :(

Homemade Pizza Rolls

These are pretty darn good.. I would definitely make them again. They're pretty easy, and obviously a lot better than the pizza rolls you get in the frozen foods section. They can be an appetizer, a snack, or we had them for dinner a few days ago. Pair it up with a salad, and bam, a fun and yummy meal. You can pick your own fillings, and do whatever you want. I used onion, mozzerella cheese, Italian sausage, and pepperoni. Honestly, I probably won't do pepperoni next time on it's own because it doesn't fill the roll as well. Pineapple and canadian bacon would be really could as well. As I said, use whatever sounds good to you!

Homemade Pizza Rolls
  • 1 roll refrigerated pizza dough (I used pillsbury.. and one roll make about 24 pizza rolls)
  • Pizza sauce (for dipping
  • Grated Parmesan cheese
  • Olive oil
  • Garlic powder
  • Oregano (or Italian seasoning)
  • Mozzerella cheese
  • Pizza topping of your choice.. I used chopped onion, pepperoni, and sausage.
Preheat your oven to whatever it says on the pizza dough package.. if I remember correctly, it's 400 degrees.

Unroll your dough onto a floured surface, take a pizza cutter and it into roughly 24 squares.  You'll want to make sure the squares are about the same size so they'll all cook evenly.  I, on the other hand, was not very good at doing that.. oh well.  Then put mozzerella cheese and whatever toppings you chose on each square.  I didn't do measurements, so you'll just have to eyeball it... you can do it.  The pizza sauce is for dipping.. I did not put it in the rolls.


When you have the stuffing on top of the squares, bring the dough up and pinch the seams together.  If you're having a hard time getting it to stay sealed, dab a little water on it.  Then place them in a pie pan (make sure to spray some nonstick stuff on it first) seam side down.

Then brush the tops of the pizza rolls with olive oil (melted butter also works), then sprinkle with oregano, garlic powder, and top it off with some grated parmesan cheese.  Bake them for about 20 minutes, or until they're golden brown.  Serve with some warm pizza sauce.. and YUM.


All of mine are totally different sizes.  Haha.  But they turned out yummy!!!  They're fun to make, and kids might like to make them with you, too!  Stuff them with whatever your little heart desires - I promise they'll be delicious!

So this weekend was my last weekend here in Illinois.. and Iowa.. or you know, the midwest. It was a pretty relaxed weekend. I think I was most excited about eating some Fincels sweet corn! My dad picked some up when we went to the farmers market Saturday morning and we had it today for lunch with some BLTs. I haven't had any in a couple years and let me tell you, there is nothing like Iowa sweet corn! So that yummy goodness was followed by a nice 3 hour nap (of course) because Sunday afternoons are the best for naps.

In 5 days I will be headed to the airport on my journey to Korea... and after 5 different airports and too many hours on airplanes, I will be there with my husband.  FINALLY.  I can't wait to see him waiting for me when I get off the airplane.  :)  He has been working so hard the past few weeks to try to get everything straightened out so I can get there.  And especially this week, he's working 12 hours shifts and trying to move into our new apartment.  I'm so thankful.. I really do have the greatest hubby ever.  Thank you for everything you're doing, babe!  I promise to spoil you when I get there!

Goodness, 5 days still seems so far away but so short of a time to get the things done for our vow renewal that I'd like to get done before I go.  The taste test for our wedding cake is this Wednesday - I'm going to taste champagne flavored yellow cake, white cake with raspberry filling, and marble cake with fudge filling.. all with buttercream frosting.  I can't wait!  Mostly because I just want to eat cake (who wouldn't?).  Our cake is going to have 4 tiers, and the top one I'm pretty sure will be red velvet.  We'll see about the other 3 after the tasting.  I may have to do each tier a different flavor if I can't decide, haha..  This week I need to get some things for the wedding cake, look around for decor, make hair and makeup appointments, and figure out the music for the ceremony... among other things.  Many other things.

Ok, time to go rest up.. I have a long week ahead!

Let the Countdown Begin!

So it's been a few days (or more than a few days) since I've updated this thing.  No cooking/baking recipes lately... been out of the loop a little bit there.  But I might try to make some homemade pizza rolls tomorrow night for dinner... that just sounds SO DELICIOUS to me right about now.  I'll let you know how they turn out!

As far as Korea goes, the last time I wrote we were still waiting on papers... and waiting.. and waiting.. story of our lives.  But last Friday Coleman called me with some great news!  We finally got the papers we needed back.  Not only that, but he also booked me a plane ticket!  OH YEAH!!  So in 9 days I will be spending lots of quality time in various airports and airplanes, on my way to see my wonderful husband!  Not only see him.. but live there with him for the next 2 years!  I am so excited to be able to experience something like this with him and I still can't believe I will be on my way in just 9 days.  Shortly after he told me how soon I would be moving, I had a moment of freak out.  Stressing over silly things.. thinking there's all these things I have to do.  Then Coleman said... there's nothing you have to do but spend time with your family, pack your bags, and get here.  Ok, so he's right.  I have a tendency to stress out easily.  So now I feel a little bit better - I have an idea of what I'm going to shove into my two bags and now I'm just going to sit back and relax!  The movers can do the rest when they come pack our stuff up in September.  Let the countdown begin!

I also got to spend some good quality time with my niece today... we took a nap, ate lunch, took a walk outside, and played with toys... it was a pretty good day!  So I'll leave you with this -
