Apple Bread {recipe}


We eat a lot of apples.  Or should I say, Clara eats a lot of apples!  It's one of her favorites, next to bananas.  I had some extra apples laying around and it's been quite a while since I've made this bread.  It's my husbands favorite.. and probably one of my favorites too (out of all the 'dessert' breads.. banana, pumpkin, etc..).  I'd be lying if I said that grating 4 cups of apples isn't a little bit tedious.  But it's so worth the end result.

Apple Bread
recipe from my mama

  • 2 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 tsp. vanilla
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 4 c. grated apples
  • 1/2 cup sugar
  • 1 tbsp. cinnamon
  • 2 tsp. flour
  • 1/4 cup butter, cold and cut into pieces

Preheat oven to 350 F.  Mix eggs, sugar, oil, vanilla, baking soda, and salt together in a large bowl.  Stir in grated apples and flour until just combined.

In a separate, smaller bowl combine 1/2 c. sugar, cinnamon, 2 tsp. flour, and butter.  Mix together until crumbly.

Sprinkle half of the topping mixture into the bottom of 2 loaf pans.  Then divide the batter into each pan.  Then sprinkle the rest of the topping mixture on top of the batter.  Bake for 1 hour, or until toothpick comes out clean.  Cool on wire rack.

It's so delicious right from the oven.. my husband could hardly wait to get his paws on it in the photo below..

  2. What kind of apples do you suggest using? A good baking apple or any apple, since it is grated into the bread?

  3. Hi Tricia! I've used baking apples, as well as my favorite eating apple (Braeburn, Fuji, or Gala)... and now I tend to just use my favorite eating apples because it's always what I have on hand. :) It won't make a difference. Enjoy!!!

  5. Amanda, I have not tried to freeze it - it's gone too fast in this house! But I don't see why you couldn't, let me know if you try it! :)
